Adding acidic foods to your meals can help to reduce the glycemic index of your food. Try these vinaigrette recipes on your salads!

 

Bleu Cheese Vinaigrette

1/2 cup extra virgin olive oil
4 ounces bleu cheese, crumbled
1/2 cup white wine vinegar
1/4 teaspoon garlic salt
black pepper, to taste

Mix the crumbled cheese with the oil. Whisk in the remaining ingredients and serve.

 

Greek Vinaigrette
Best made at least several hours before, so that the flavors are released.

1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
1-1/2 teaspoons crushed Greek oregano
1 teaspoon salt
pinch black pepper

Whisk all together or place in a jar and shake to combine. Store in the refrigerator.

Pomegranate Vinaigrette

1 cup pomegranate juice
4 - 5 packets stevia, to taste
1/2 teaspoon salt
2 tablespoons quality balsamic vinegar
1/4 cup extra virgin olive oil

In a stainless steel or enamel saucepan, boil the pomegranate juice for 10 minutes, to reduce to about 1/3 cup. Use the lowest heat setting that still allows the juice to boil. Remove from heat and let cool. Stir in the remaining ingredients. Whisk before serving or place in a jar and shake.
